Our process, simplified

Not a factory shortcut — the steps that make the difference.

1 Nixtamalize

We cook organic corn with food-grade lime, then steep it overnight so the kernel fully transforms before grinding.

Why it matters

Nixtamalization changes the corn’s chemistry — loosening the hull, improving grind quality, and developing deeper corn flavor. It also helps masa bind naturally, which is critical for tortillas that cook tender and stay flexible instead of cracking.

2 Stone-grind

After washing, the nixtamal is stone-ground into fresh masa — the foundation of every tortilla we make.

Why it matters

Stone-grinding preserves aroma and creates a cohesive, slightly elastic masa. That structure is what gives tortillas their soft bite, strong fold, and ability to reheat cleanly without drying out.

3 Cook hot & fast

The masa is rolled to thickness, cut into rounds, and cooked at very high heat for a fast, even set.

Why it matters

High heat cooks tortillas quickly, setting the surface while keeping the interior tender. This produces a tortilla that’s soft and pliable on the line — not gummy, brittle, or tough — even under heavy service.

4 Cool, pack, deliver

Tortillas are cooled on racks before packing, then prepared for fresh pickup or frozen distribution.

Why it matters

Proper cooling prevents trapped steam and condensation in the bag. It protects texture, flavor, and shelf life — ensuring consistent performance whether tortillas are used immediately or pulled from the freezer weeks later.
